Everyday Paleo Pizza

H.S. Primal Plate's paleo pizza!
Crust:
2 cups almond flour
2 eggs
3 tbsp olive oil
¼ tsp baking soda
1 tsp garlic powder
1 ½ tbsp fresh rosemary chopped


Toppings:
1 cup organic or home made marinara sauce from
1 lb Italian pork sausage nitrate free (Isernio's extra lean all natural chicken sausage)
1/4 cup Chopped red onions
1 green onion chopped
Handful of torn basil leaves
                                                                                                           2 small tomatoes diced
                                                                                                           1/2 cup roasted red peppers diced
                                                                                                           Handful of sliced black olives

Preheat your oven to 350. Using a spoon mix all crust ingredients together until it becomes very thick. Using your hands, form the dough into a ball. Lightly grease a pizza pan or a cookie sheet with olive oil. Place the ball of dough in the center of your cookie sheet or pizza pan and using your hands, push and pat the dough down into the shape of a circle (or an oval in my case…). You want to make the dough as thin as possible. Your pizza will be about 12 inches across. Bake JUST the crust in your pre-heated oven for 20 minutes. While your crust is cooking, prepare your toppings. If you use sausage like we did, this is when you should crumble it into a large saute pan and brown. After the crust if done, remove from the oven and evenly spread the marinara sauce over the crust. Add the sausage and all remaining toppings evenly over the sauce and bake again for an additional 25-30 minutes. Get creative and use whatever toppings you might like – ours was great but I also suggest trying chicken, artichoke hearts, and even broccoli!! Go wild with it and as always: Enjoy!

Steak Roll with Fried Cauliflower Rice

Yum!  There is nothing like doing a CrosFit workout and then coming home to an amazing meal.  This is it!  Total Paleo!  You are going to wish you had H.S. Gingered Butternut Squash Soup...

... or at least what is left of it!  Yummmmm!  I had to lick the pan to get every bit of it.
1 butternut squash peeled and seeded
1 t olive oil
1 medium onion, diced
1/2 cup chopped leeks (white & green parts)
1 t ginger, peeled
5 cups chicken stock
2 t nutmeg

Suggested additions, increase ginger, add pepper & salt to taste.
This soup freezes exceptionally well.

The tastiest slaw ever with Fish Tacos

Slaw
2 t red wine vinegar
2 t olive oil
- juice of 2 limes
1/2 t garlic, minced
1/8 t black pepper
2 cups red cabbage, thinly slice
2 cups romaine lettuce, chopped
1 mango, peeled, pitted and chopped
1 cup cucumbers, peeled, seeded and cut into strips

1. Combine vinegar, olive oil, lime juice, garlic and black pepper in a small bowl.
2. In large bowl and mix all other ingredients.
3. Mix well and pour liquid over the slaw, tossing to mix.
4. Cover and chill for at least 1 hour.

Happy Birthday to you, HopSing!

Jeff (aka. HopSing), you are truly amazing!  You cook all day for H.S. Primal Plate on your birthday, so wife here, Andrea, shows her appreciation by home making you a Paleo cake.  Thankfully you choose the the Classic Carrot Cake with the Creamy Coconut Frosting from the Gluten-Free Almond Flour cookbook, by Elana Amsterdam.  I adjusted a little bit of the recipe and it was pretty good.  Just so it is in writing, I, Andrea, do not cook, so this hopefully was a real treat.  Thank-you Jeff for all that you do and your amazing cooking ability will maybe rub a little off on me, and if not, then at least the kids have inherited your ability.  Happy 45+ birthday.  Your loving, but non-chef wife. Catering Debut Menu for 9-25-2011

Tons of food was eaten for a very fun event called Apple Pressing.  Yep, that is what we do in the country is make food and drinks.  So the debut menu for this fun event consisted of three entrees, two sides and two desserts.  Here is what was available & YES it is all paleo!

Entrees:
  • Almond Crusted Coho Salmon
  • Ragu Bolognese with Spaghetti Squash
  • Chicken Chili with Paleo (corn) muffins  (really this did not have corn)
Sides:
  • Balsamic Roasted Veggies
  • Garlic Rosemary Roasted Beets
Desserts:
  • Lemon Bars
  • Ginger Macadamia Brownies

Testing the Primal Blog

Hey HopSing,
I am totally interested in your yummy food.  I have been hearing around town that you are cooking healthy and into the whole paleo cooking and food delivery is an option.  I just can't find the time to cook for my family and I am totally interested in your kind of cooking and living the Paleo/CrossFit life style.
