Happy Birthday to you, HopSing!

Jeff (aka. HopSing), you are truly amazing!  You cook all day for H.S. Primal Plate on your birthday, so wife here, Andrea, shows her appreciation by home making you a Paleo cake.  Thankfully you choose the the Classic Carrot Cake with the Creamy Coconut Frosting from the Gluten-Free Almond Flour cookbook, by Elana Amsterdam.  I adjusted a little bit of the recipe and it was pretty good.  Just so it is in writing, I, Andrea, do not cook, so this hopefully was a real treat.  Thank-you Jeff for all that you do and your amazing cooking ability will maybe rub a little off on me, and if not, then at least the kids have inherited your ability.  Happy 45+ birthday.  Your loving, but non-chef wife.
